Stir-Fried Lamb With Noodles

Ingredients
  Cellophane noodles 100 Gram
  Sunflower oil 1 Tablespoon
  Spring onions 3 , chopped
  Fresh root ginger 2 1⁄2 Centimeter, peeled and chopped
  Fresh root ginger 1 Inch, 2.5 centimeters, peeled and chopped
  Garlic 2 Clove (10 gm), sliced
  Celery sticks 2 , chopped
  Lean lamb 450 Gram, thinly sliced
  Red pepper 1 , cored, seeded and sliced
  Light soy sauce 2 Tablespoon
  Dry sherry 2 Tablespoon
  Chinese stock 150 Milliliter
  Sesame oil 2 Teaspoon
Directions

Soak the noodles in warm water for about 10 minutes; drain.
Heat the oil in a wok or frying pan over a moderate heat.
Add the spring onions, ginger and garlic and stir-fry for 1 minute.
Add the celery and lamb and cook for 2 minutes.
Add the red pepper, soy sauce and wine or sherry and bring to the boil.
Stir in the stock and noodles and simmer for 5 minutes.
