Lamb Chops With Wine And Herbs
|Lamb loin chops||4|
|Dry white wine||1⁄2 Cup (8 tbs)|
|Garlic||1 Clove (5 gm), crushed|
|Tomatoes||2 , peeled and seeds removed|
|Parsley||1 Tablespoon, chopped (For Garnish)|
1 In a pan, combine butter and oil, heat until foaming.
2 Saute chops in it until tender.
3 Remove from the pan and keep warm.
4 Discard fat from pan and add wine.
5 Scrape the bottom to release browned pieces clinging to the skillet.
6 Boil wine over high heat until the wine is reduced to half.
7 Add herbs, garlic and seasoning.
8 Add the tomatoes, chopped roughly.
9 Simmer for 5 minutes.
10 Return the chops to the skillet and cook for 5 more minutes.
11 Garnish with chopped parsley and serve.
