Lamb With Lettuce Hearts
|Lamb shoulder||3 Pound|
|Lettuce hearts||3 Pound|
|Onions||2 , chopped|
|Dill||1 , chopped|
|Water||2 Cup (32 tbs)|
|Scallions||7 Ounce, chopped|
|Avgolemono sauce||1 Tablespoon|
Cut lamb into cubes.
Melt butter in a saucepan or casserole, add meat and onions, and brown well over moderate heat.
Add water and salt and pepper, bring to a boil, cover, and simmer for 1 hour.
Meanwhile cover lettuce hearts with boiling water and let stand while meat is cooking.
When meat is tender, add lettuce, dill, and scallions.
Bring to a boil and simmer for 15 minutes longer.
Avgolemono sauce may be added if desired.
