|Cleaned veal/Lamb kidneys||8 Ounce, cut into 0.5 inch slices|
|Prepared mustard||1 Cup (16 tbs)|
|Red cayenne pepper/Few drops red hot sauce||1 Dash|
|Vegetable oil||1 Teaspoon|
Sprinkle kidneys lightly with salt and pepper, and spread with mustard.
Sprinkle with cayenne pepper or red hot sauce.
Broil 3 inches from heat 7-9 minutes.
Place in hot dinner plate, and drizzle oil on kidney.
