Homemade Ketchup

Lynn demonstrates how to make homemade ketchup. This is an easy and super delicious. This makes about 5 cups.
  Vegetable oil 3 Tablespoon
  Finely chopped onion 2 Cup (32 tbs)
  Peeled and chopped ginger 1 Tablespoon
  Garlic 4 Clove (20 gm), minced
  Mustard powder 1 Teaspoon
  Ground allspice 1⁄2 Teaspoon
  Cayenne powder 1⁄4 Teaspoon
  Tomato paste 1⁄4 Cup (4 tbs)
  Canned peeled tomatoes 28 Ounce
  Bay leaves 2
  Packed light brown sugar 2⁄3 Cup (10.67 tbs)
  Apple cider vinegar 1⁄2 Cup (8 tbs)
  Molasses 1 Tablespoon
  Kosher salt 4 Teaspoon

1. In a large pot, heat the vegetable oil and add the onion. Cook for 5 minutes stirring occasionally, until soft and translucent.
2. Stir in the ginger, garlic, mustard powder, allspice and cayenne and cook, stirring for 1 minute.
3. Add in the tomato paste and cook for a minute. Add canned tomato and scrape up any browned bits from the bottom of the pot with a wooden spoon; remove from the heat.
4. Puree the ketchup in batches in a blender until smooth; return to the pot. Add cider vinegar, brown sugar, kosher salt, molasses, and bay leaves. Stir well.
5. Place the ketchup over the stove and simmer for 45 min – 60 min, until thick. Cool it and preserve in a jar.

6. Serve ketchup with potato fritters and enjoy!
