Peel, remove, and discard seedy pulp from a very large zucchini.
Cut in pieces and feed into vegetable juicer.
The pale green liquid that comes out (in profusion) can be used in many ways to add taste and nutrition in cooking â€” any place where water would ordinarily be used.
It can be stored for several days in refrigerator or frozen.
For convenience, freeze juice in ice cube trays.
When solidly frozen, remove cubes from trays, and store in plastic bag in freezer.
Remove one or two at a time as needed; they melt easily for use in cooking.
Suggested uses: as "water" for cooking other vegetables or for making soups, in gravies or cream sauces, as liquid in jello for vegetable salad.
