Veggie Pick Me Up

Ingredients
  Canned low sodium vegetable juice 48 Ounce
  Chopped tomatoes 1 Cup (16 tbs) (Fresh Or Low-Sodium Canned)
  Chopped celery 2 Tablespoon
  Chopped cucumber 2 Tablespoon
  Lemon juice 2 Tablespoon
  Lime juice 2 Tablespoon
  Chopped onion 1 Tablespoon
  Chopped green bell pepper 2 Tablespoon
  Chopped carrot 2 Tablespoon
  Chopped parsley 2 Tablespoon
  Dried dill 1 Teaspoon
  Garlic 2 Clove (10 gm), minced
Directions

1. Pour 1 1/2 cups of the vegetable juice cocktail into an ice cube tray and freeze.
2. When cubes are frozen solid, place the remaining vegetable juice, tomatoes, celery, cucumber, lemon juice, lime juice, onion, green pepper, carrot, parsley, dill, and garlic in a food processor or blender and puree.
3. Serve vegetables pureed over frozen cubes.
