Tomato Juice Rose Hip Appetizer

Ingredients
  Tomato juice 3 Cup (48 tbs)
  Lemon juice 1 Tablespoon
  Mint sprig 1
  Rose hip juice 3 Cup (48 tbs)
Directions

Blend all ingredients to prepare rose-hip juice Place 1/2 cup of rose hips in saucepan.
Cover with 3 cups of water.
Simmer for 15 minutes.
Strain and reserve juice, discarding rose hips.
Cool and use immediately, or process while hot in sterilized jars for later use.
