Fried Kidneys In Lemon Juice
|Lamb kidneys/5 beef kidneys||12|
|Ghee/Substitute||112 Cup (1792 tbs)|
|Plain flour||2 Tablespoon|
|Lemon juice||3⁄4 Cup (12 tbs)|
|Dried mint||1 Teaspoon|
Wash and dry kidneys.
Split lengthwise and remove skin.
Flatten with a pestle or rolling pin and sprinkle with salt and pepper.
Melt ghee in a pan and fry kidneys until brown on both sides.
Add flour to pan, lower heat and stir until it begins to turn brown.
Add lemon juice and bring to the boil.
Return kidneys to pan, add dried mint and allow to simmer in the sauce for a few minutes.
