1. Wash and chop the apples.
2. Wash and peel the lemon. Scrape the inside white portion of the lemon, discard and then cut the peel into fine shreds. Set the lemon juice aside.
3. Put both the apples and peel together into a vessel with a tight-fitting lid.
4. Boil the water, pour over the apples, cover and allow to cool. When cold, strain. Add the sugar and lemon juice to taste.
