Plum Juice

  Plums 1 Kilogram
  Sugar 1 Kilogram
  Water 2 Cup (32 tbs)
  Citric acid 2 Teaspoon (10 gms)
  Sodium benzoate To Taste (as required)

Combine plums and water in a pan and cook till it comes to a boil.
Remove from heat.
When it cools down, mash with hands and remove stones from plums.
liquidise plums and pass through sieve.
Combine plum juice and sugar in a pan and place the pan on fire.
When the sugar dissolves, add citric acid dissolved in two tablespoons water.
Remove from heat.
When it cools down, add preservative (dissolved in some water) in the proportion of 1 gm. per every 1 kg. of the finished product.
Fill the juice in sterilized bottles leaving a gap of 1 1/2 inches on the top.
Cork and seal the bottles.
Store the bottles in a cool, dry place.
