Orange Juice Cookies
|All purpose flour||2 1⁄2 Cup (40 tbs)|
|Butter/Shortening||3⁄4 Cup (12 tbs)|
|Sugar||1 Cup (16 tbs)|
|Eggs||2 , beaten|
|Strained orange juice||3⁄4 Cup (12 tbs) (Fresh / Canned)|
|Flaked coconut||1 Cup (16 tbs)|
Combine flour, soda and salt: set aside.
Cream butter until light and lemon-colored: add sugar gradually, beating well after each addition.
To creamed mixture slowly add eggs which have been well beaten.
Alternately add dry Ingredients and liquid, beating until smooth after each addition.
Drop by teaspoonsful onto ungreased cookie sheets.
Sprinkle with additional coconut If desired.
Bake at 400° for 10 to 12 minutes.
