Fruit Juice Jelly
|Unsweetened apple juice/Unsweetened grape / orange / pineapple juice / cranberry juice cocktail||4 Cup (64 tbs) (Not Low Calorie)|
|Powdered fruit pectin||1 3⁄4 Ounce (1 Package)|
|Lemon juice||1⁄4 Cup (4 tbs)|
|Sugar||4 1⁄2 Cup (72 tbs)|
In 8- to 10-quart kettle combine fruit juice, pectin, and lemon juice.
Bring to full rolling boil (a boil that cannot be stirred down).
Stir in sugar.
Return to full rolling boil.
Boil hard, uncovered, for 1 minute; stir constantly.
Remove from heat; quickly skim off foam with metal spoon.
Ladle fruit syrup at once into hot, sterilized jars, leaving 1/2 inch headspace.
Seal jars using metal lids or paraffin.
