Poached Bananas In Apple Juice
|Apple juice||2 Cup (32 tbs)|
|Vanilla extract||1 Teaspoon|
|Firm ripe bananas||4 , cut in half|
|Plain non-fat yogurt||8 Teaspoon|
Combine apple juice, raisins, vanilla, and cinnamon in a saucepan.
Bring to a light boil.
Reduce heat and simmer for 5 minutes.
Add bananas; then cover and simmer 6 to 8 minutes or until bananas are just tender.
Spoon each half banana into a small dessert bowl or plate.
Remove cinnamon stick from sauce.
Divide sauce evenly among the plates.
Top each plate with 1 tsp (15 mL) of yogurt.
