Beef Round Tip Roast Au Jus

Ingredients
  Beef round tip roast 6 Pound
  Salt 2 Teaspoon
  Pepper 1⁄4 Teaspoon
  Water 2 Cup (32 tbs)
Directions

1. Place round tip roast on wire rack in a medium-sized open roasting pan. Sprinkle roast on all sides with salt and pepper. Insert meat thermometer into center of roast. Roast in 325°F. oven for 3 to 3 1/2 hours or until thermometer reaches 140°F. for rare (about 30 minutes per pound) or until of desired doneness.
2. When roast is done, place on carving board or warm large platter; keep warm.
3. Remove wire rack from roasting pan. Skim any fat from meat drippings; add water. Over medium-high heat, heat mixture to boiling, stirring constantly and scraping until browned bits are dissolved; strain mixture.
