Barley With Red Currant Juice
|Water||4 Cup (64 tbs)|
|Barley||1⁄2 Cup (8 tbs), washed|
|Red currant juice/Blackberry / raspberry juice / substitute other fruit juice||2 Cup (32 tbs)|
|Lemon||1 , juiced|
|Sugar||1⁄2 Cup (8 tbs)|
|Raisins||1 Cup (16 tbs)|
Bring the water to a boil and add the barley and cinnamon stick.
Lower the heat and simmer very slowly, uncovered, for 1 1/2 hours.
Add the remaining ingredients and bring to a boil.
Lower the heat and continue simmering slowly for 1/2 hour or until the mixture is the consistency of thick soup.
Remove the cinnamon stick.
