Latkes or latkas, also familiar as potato pancakes, are deliciously made pancakes out of potatoes and egg in onion flavor. A shallow oil-fried variety of pancakes, latkes often take in generous topping, mainly with condiments, sweet and sour cream, sauces etc. Today latkes are made with any variety of vegetables; however, the potato variety has always been the prime choice. When made, latkes allow a creamy bite along with a veggie crunch. Potato latkes are best enjoyed with a home made sauce, sweet or spicy.
