Ingredients
  Plum tomatoes 4 , cored, seeded, and finely diced to make 1 cup
  English cucumber 12 Ounce, finley diced (1 Small One)
  Yellow bell pepper 1 , diced to make 1 cup
  Scallions 4 , thinly sliced to make 1/4 cup
  Fresh lime juice/Lemon juice 3 Tablespoon
  Extra virgin olive oil 1⁄4 Cup (4 tbs)
  Salt 3⁄4 Teaspoon
  Pepper 1⁄2 Teaspoon
Directions

1. Combine tomatoes, cucumber, bell pepper, and scallions in a bowl.
2. Combine lime or lemon juice and oil in a small bowl, whisking to blend. Add salt and pepper. Pour dressing over vegetables and toss to coat.
