|Plum tomatoes||4 , cored, seeded, and finely diced to make 1 cup|
|English cucumber||12 Ounce, finley diced (1 Small One)|
|Yellow bell pepper||1 , diced to make 1 cup|
|Scallions||4 , thinly sliced to make 1/4 cup|
|Fresh lime juice/Lemon juice||3 Tablespoon|
|Extra virgin olive oil||1⁄4 Cup (4 tbs)|
1. Combine tomatoes, cucumber, bell pepper, and scallions in a bowl.
2. Combine lime or lemon juice and oil in a small bowl, whisking to blend. Add salt and pepper. Pour dressing over vegetables and toss to coat.
