1. Combine cottage cheese, cream cheese, sugar substitute, almond extract, cinnamon, and egg yolks in a medium bowl, whisking until well blended.
2. Lay crepes, cooked side up, on flat surface. Spoon 1/4 cup cheese mixture near the top of the crepe, then fold envelope fashion. Place blintz, seam-side down, on wax paper and continue until all blintzes are folded.
3. Heat a nonstick skillet or griddle over medium-low heat. Spray with cooking spray and add blintzes, seam-side down. Cook until golden brown, about 2 minutes per side. Serve with jam or fruit puree and sour cream.
