Potato Latkes

Ingredients
  Grated potatoes 3 Cup (48 tbs)
  Shredded onion 1⁄2 Cup (8 tbs)
  Eggs 2 , beaten
  All purpose flour 2 Tablespoon
  Salt 1 Teaspoon
  Rendered chicken fat/Vegetable cooking oil 3 Tablespoon, melted
  Dairy sour cream/Applesauce 2 Tablespoon
Directions

In large bowl stir together potatoes, anion, eggs, flour, and salt.
Mix well.
Grease a hot griddle or skillet with melted chicken fat or vegetable oil.
Drop batter by tablespoonfuls onto griddle or skillet.
Spread the batter slightly.
Fry till browned, 2 minutes per side.
Keep pancakes warm as more are fried.
