|Shredded onion||1⁄2 Cup (8 tbs)|
|Eggs||2 , beaten|
|All purpose flour||2 Tablespoon|
|Rendered chicken fat/Vegetable cooking oil||3 Tablespoon, melted|
|Dairy sour cream/Applesauce||2 Tablespoon|
In large bowl stir together potatoes, anion, eggs, flour, and salt.
Grease a hot griddle or skillet with melted chicken fat or vegetable oil.
Drop batter by tablespoonfuls onto griddle or skillet.
Spread the batter slightly.
Fry till browned, 2 minutes per side.
Keep pancakes warm as more are fried.
