Cherry Topped Cheese Blintzes
|Dry cottage cheese||12 Ounce (1 Carton)|
|Ground cinnamon||1 Dash|
|Basic dessert crepes||12|
|Canned cherry pie filling||1 Cup (16 tbs)|
|Dairy sour cream||1⁄2 Cup (8 tbs)|
Beat together egg, cottage cheese, sugar, vanilla, and cinnamon till nearly smooth.
Spoon some cheese mixture in center of unbrowned side of a crepe.
Fold two opposite edges of crepe to overlap atop filling.
Fold in remaining edges, forming a square packet; repeat with remaining cheese mixture and crepes.
In a skillet cook filled crepes on both sides in hot butter till heated through.
Heat cherry pie filling.
