Spiced Port Grape Jelly
|Boiling water||1 Cup (16 tbs)|
|Cinnamon stick||1 , broken (About 3 Inch)|
|Sugar||3 Cup (48 tbs)|
|Powdered fruit pectin||1 3⁄4 Ounce (1 Box)|
|Grape juice||1⁄2 Cup (8 tbs) (Use Bottled)|
|Port wine||1 1⁄2 Cup (24 tbs)|
|Lemon juice||1 Tablespoon|
|Paraffin||1 Cup (16 tbs)|
Pour boiling water over cinnamon and cloves in a small saucepan; cover and place over low heat 5 minutes.
Set aside 5 minutes.
Strain (discard spices) and add more water, if needed, to make 1 cup liquid.
Measure the sugar into a bowl; set aside.
Blend the pectin with grape juice, wine, "spice brew," and lemon juice in a large saucepan; stir until pectin is dissolved.
Cook over high heat until mixture comes to a full rolling boil, stirring constantly.
Add the sugar all at one time.
Cook and stir over high heat until mixture returns to a full boil; boil, stirring constantly, 1 minute.
Remove from heat; skim off any foam.
Ladle into hot sterilized jelly glasses.
