Rosemary Jelly

The Rosemary Jelly is simply delicious. I end up making this almost every month as they are used everyday for breakfast! You will understand why the Rosemary Jelly is so popular at my place if you try it for yourself!
  Boiling water 1 1⁄2 Cup (24 tbs)
  Dried rosemary 2 Teaspoon
  Sugar 3 1⁄2 Cup (56 tbs)
  Cider vinegar 2 Tablespoon
  Red food coloring 4 Drop
  Liquid fruit pectin 3 Ounce (1/2 Bottle)
  Paraffin 1

Pour boiling water over rosemary in a small saucepan; cover tightly and set aside about 15 minutes.
Strain "herb brew" through a fine sieve or cheesecloth into a large saucepan.
Add the sugar, vinegar, and food coloring.
Stir over medium heat until sugar is dissolved; increase heat and bring mixture to boiling.
Add pectin, bring to boiling, and boil rapidly 1 minute, stirring constantly.
Remove from heat; skim off foam.
Pour into hot sterilized glasses; seal with melted paraffin
