Mint Jelly

Ingredients
  Apples 6 Pound (Snow, 1/2 Peck)
  Water 2 Cup (32 tbs) (As Required, To Cover)
  Sugar To Taste (As Required)
  Chopped mint 1⁄2 Cup (8 tbs)
  Lemon juice 2 Tablespoon
  Vegetable color 2 Drop (Green Variety)
Directions

Wash apples, cut into quarters, and place in heavy kettle with water almost to cover.
Cover kettle and cook until apples are soft mash and drain through cheesecloth.
Measure juice and set aside equal amount of sugar.
Boil juice 5 minutes, add sugar, bring to boil again and boil 2 minutes.
Add mint leaves and cntinue to boil until mixture jells when tested on cold plate.
Add lemon juice and green coloring.
Strain into hot sterilized glasses and seal with paraffin.
