Christmas Freezer Jelly

Ingredients
  Juice 2 Cup (32 tbs)
  Pectin powder 1 3⁄4 Ounce, divided
  Sugar 4 1⁄2 Cup (72 tbs), divided
  Apple juice 2 Cup (32 tbs)
  Green food coloring 4 Drop
Directions

Combine cranapple juice and 2 tablespoons (1/2 package) pectin in a 2-quart glass measure.
Microwave at HIGH, uncovered, 7 to 10 minutes or until mixture boils, stirring once.
Stir in 2 cups sugar.
Microwave at HIGH 5 to 7 minutes or until mixture boils hard for 1 full minute.
Skim off any foam with a metal spoon.
Pour into hot sterilized glasses or jars, filling each half full.
Set aside until jelly is partially set.
Combine apple juice, food coloring, if desired, and remaining 2 tablespoons pectin in a 2-quart glass measure.
Microwave at HIGH, uncovered, 7 to 8 minutes or until mixture boils, stirring once.
Stir in remaining 2 1/2 cups sugar.
Microwave at HIGH for 5 to 7 minutes or until mixture boils hard for 1 full minute.
Skim off any foam with a metal spoon.
Carefully spoon mixture into jars over first layer of jelly, leaving 1/4 inch head-space.
Cover with lids, and let stand at room temperature 24 hours.
Store in freezer.
To serve, remove from freezer, and allow to come to room temperature.
