Chicken With Currant Jelly
|Frying chicken||3 Pound|
|Currant jelly||1⁄4 Cup (4 tbs)|
|Lemon rind||1 Teaspoon|
|Soy sauce||1 Tablespoon|
|Orange juice||1 Cup (16 tbs)|
|Green pepper||1 Large|
|Flour||1 Cup (16 tbs)|
Coat chicken with seasoned flour, shake it in a brown paper bag.
Heat margarine and oil in a large skillet, brown the chicken pieces.
Coat each browned chicken piece with currant jelly, return to skillet.
Combine lemon rind, soy sauce, and orange juice, pour over jellied chicken.
Cover skillet, simmer for 30 to 40 minutes or until chicken is tender.
Baste several times.
Last, add green pepper, simmer for 5 minutes more.
Serve at once, garnished with orange slices.
