Griddle Cakes With Grape Jelly
Mix 2 tablespoonfuls of fresh curd or cottage cheese and 1 tablespoonful of grape jelly.
Flavor if liked with orange essence.
When these ingredients are well blended, add some flour, enough to make a thin mixture softer than short-pastry dough.
Knead this in your hands, quickly roll on a floured board to a thickness of about 1/4", and cut it out into rounds with the help of a wineglass.
Now brown these rounds lightly on either side in a greased frying pan.
Serve warm or cold, either as they are, or joined in twos like a sandwich with a filling of grape jelly (see above).
They are at their best when warm. garnish as desired.
