Mint Jelly

Ingredients
  Apple juice/White currant juice 1 Pint (Made From Green Apples And Mint Stalks)
  Lemon 1 , juiced
  Sugar 1 Pound
  Mint sprig 6 (Preferably Apple Mint)
Directions

MAKING
1 In a pan, add the juice and bring to boiling point.
2 Boil until the flavour of mint is pronounced.
3 Remove the mint and discard.
4 Add in the sugar and boil till it sets.
5 Add some finely chopped mint, just before potting and, if desired along with a few spots of green vegetable colouring.

SERVING
6 Store in small jars so that the opened jars do not lie about for many days.
7 Use as soon as you open the jar, as this jelly does not keep its flavour for long after being opened.
