Port Wine Jelly

Ingredients
  Port wine 1 Pint (About 3/4 Bottle)
  Cinnamon stick 1⁄2 Inch
  Lemon rind strips 2
  Lump sugar 4 Ounce
  Gelatin 3 Tablespoon, soaked in 3/4 pint water
Directions

GETTING READY
1) Rinse jelly moulds in cold water.

MAKING
2) In a saucepan, add half the port wine.
3) Allow to boil and then simmer for 2-3 minutes.
4) Add cinnamon stick, lemon rind and the sugar and allow to infuse for 10 minutes.
5) Soften the gelatin by soaking in water for 2-3 minutes, and then pour into the flavored port.
6) Gently heat to dissolve the gelatin and then add the remaining port.
7) Strain and add into jelly moulds and allow to set.

SERVING
8) Garnish.
