Concord Grape Jelly
|Concord grapes||3 Quart|
|Water||1⁄2 Cup (8 tbs)|
|Sugar||7 Cup (112 tbs)|
|Liquid pectin||3 Ounce (1/2 Bottle)|
Crush thoroughly in a saucepan.
Add the water.
Bring to the boil.
Reduce heat and simmer 10 minutes.
Place pulp in a jelly bag.
Squeeze out juice.
Measure out 4 cups of juice.
Combine with the sugar in a preserving kettle.
Stir very well to dissolve the sugar.
Place over high heat.
Bring to the boil, stirring constantly.
Stir in pectin.
Bring to a full rolling boil.
Boil hard 1 minute, stirring constantly.
Remove from the heat.
Remove scum with a metal spoon.
Pour carefully into hot sterilized glasses.
Seal immediately with melted paraffin wax.
