Crab Apple Jelly

Ingredients
  Apples 4 Pound
  Crab apples 4 Pound
  Water 2 Pint
  Cloves 4
  Granulated sugar 1⁄4 Cup (4 tbs) (For Coating)
Directions

GETTING READY
1. Wash and pick over the fruit, cut away any bruised part and cut the crab apples into quarters

MAKING
2. Put the fruit in a pan along with water and cloves and simmer with te lid on till soft and pulpy
3. Strain for several hours through a scalded jelly bag or strong linen cloth, without squeezing
4. Measure into a saucepan and, for every pint, add a pound of sugar; stir over low flame until the sugar dissolves
5. Boil steadily for a set, say fifteen minutes, and skim thoroughly before turning the heat off
6. Add to clean warm jars and cover adn seal while still hot

7. Serve/Use as appropriate
