Ginger Lemon Jelly
|Fresh lemon juice||1⁄2 Cup (8 tbs)|
|Water||2 Cup (32 tbs)|
|Sugar||6 Cup (96 tbs)|
|Ground ginger||1 Tablespoon|
|Liquid pectin||1 Bottle (1 l)|
1) In a large kettle, mix all the ingredients except pectin and bring to a boil.
2) Pour in liquid pectin, bring to a full boil and then simmer for 1/2 minute.
3) Take off from heat and skim.
4) Into hot sterilized jars, pour the jelly and seal after cooling slightly.
5) Use as required.
