Honey Orange Jelly
|Sauterne||1 1⁄2 Cup (24 tbs)|
|Shredded orange peel||2 Teaspoon|
|Orange juice||1⁄2 Cup (8 tbs)|
|Lemon juice||2 Tablespoon|
|Powdered fruit pectin||1 3⁄4 Ounce (2 Tablespoon, Package)|
|Honey||3 Cup (48 tbs)|
In large saucepan or Dutch oven mix sauterne, orange peel, orange juice, lemon juice, and fruit pectin.
Bring to full rolling boil.
Stir in honey; return to boiling.
Boil 5 minutes, stirring constantly.
Remove from heat.
Skim off foam with metal spoon.
Place a metal spoon in a hot sterilized wine glass.
Quickly pour hot jelly into glass to 1/8 inch from top.
Cover with hot paraffin.
Repeat with five more glasses.
After paraffin on glasses has hardened, top with Snowdrift Paraffin, if desired.
