|Strained fresh lemon juice||2 Tablespoon|
|Green food color||2 Drop|
|Sugar||3 1⁄2 Cup (56 tbs)|
|Liquid pectin||3 Ounce (1/2 Bottle)|
Wash mint leaves and stems, and put in a large saucepan; crush with a masher or drinking glass.
Add the water and bring quickly to a boil.
Remove from heat, cover, and let stand for 10 minutes.
Strain and measure 1 2/3 cups into large saucepan.
Add lemon juice and a few drops of food coloring.
Stir in sugar, put over high heat and bring to a boil, stirring constantly.
At once stir in pectin.
Then bring to a full rolling boil and boil hard for J minute, stirring constantly.
Remove from heat, skim off foam with metal spoon, and pour quickly into hot sterilized jars.
