Honey Orange Jelly
|Sauterne||2 Cup (32 tbs)|
|Orange peel||1 Tablespoon, finely shredded|
|Orange juice||1 Cup (16 tbs)|
|Lemon juice||2 Tablespoon|
|Powdered fruit pectin||1 3⁄4 Ounce (1 Package)|
|Sugar||1 1⁄2 Cup (24 tbs)|
|Honey||1 Cup (16 tbs)|
In large saucepan or Dutch oven mix sauterne, orange peel, orange juice, lemon juice, and fruit pectin.
Bring to full rolling boil, stirring constantly.
Stir in sugar and honey.
Bring again to full rolling boil.
Boil hard, uncovered,for 1 minute, stirring constantly.
Remove from heat.
Quickly skim off foam using a metal spoon.
Place a metal spoon into a hot, sterilized wine glass (to prevent glass from breaking).
Quickly pour hot jelly into glass to 1/4-inch from top.
Repeat with 5 more glasses.
Top with Snowdrift Paraffin or paraffin.
