Cranberry Orange Jelly
|Cranberries||4 Cup (64 tbs) (1 Pound)|
|Boiling water||2 Cup (32 tbs)|
|Orange||1 (Rind Grated)|
|Sugar||1 Cup (16 tbs)|
|Honey||3⁄4 Cup (12 tbs)|
Pick over, wash, and drain cranberries.
Put in saucepan with boiling water and grated rind.
Bring to boil and simmer, covered, for 20 minutes.
Force through fine sieve.
Bring to rapid boil.
Stir in sugar and honey and boil for 3 minutes.
Pour into hot sterilized glasses.
Seal with paraffin.
