Loquat Jelly

Ingredients
  Hard partially ripe loquats 8 Cup (128 tbs)
  Sugar 4 Cup (64 tbs)
Directions

Wash the loquats and remove the blossom ends.
Barely cover the loquats with water and bring to a boil.
Simmer until soft and pour into a jelly bag to strain the juice.
Bring the juice to a boil and simmer until thick and red.
Measure the juice and add 1 cup sugar per cup juice.
Boil over high heat to the jelly stage.
Pour into hot sterilized jars or jelly glasses and seal.
