Fresh Mint Jelly
|Mint||1 1⁄2 Bunch (150 gm)|
|Water||1 1⁄2 Cup (24 tbs)|
|Dry vermouth||1 Cup (16 tbs)|
|Lemon juice||2 Tablespoon|
|Mint flavoring||2 Drop|
|Green food coloring||To Taste|
|Sugar||3 1⁄2 Cup (56 tbs)|
|Liquid fruit pectin||1⁄2 Bottle (0.5 l)|
Wash mint and pack the leaves firmly into a 1-cup measuring cup.
Pour into a blender and add the water.
Whiz until chopped finely.
Pour into a saucepan and add vermouth.
Quickly bring to a rolling boil and remove from heat.
Cover and let stand 10 minutes.
Strain through cheesecloth and measure 1% cups into a medium-size saucepan.
Add lemon juice, mint flavoring, few drops coloring and the sugar.
On high heat bring to a full rolling boil, stirring constantly.
Stir in the pectin and boil hard for 1 minute.
Remove from heat and skim off foam with a metal spoon.
Pour quickly into hot sterilized jelly glasses.
Cover with hot melted paraffin.
