Chocolate Jelly Roll
|Cake flour||1 Cup (16 tbs), sifted|
|Baking powder||1 Teaspoon|
|Cocoa||1⁄4 Cup (4 tbs)|
|Sugar||1 Cup (16 tbs)|
|Water||1⁄3 Cup (5.33 tbs)|
|Vanilla essence||1 Teaspoon|
|Instant chocolate mix||6 Ounce|
|Orange filling||1⁄4 Cup (4 tbs)|
|Chocolate glaze||2 Tablespoon|
1)Heat oven to 375 degrees.
2)Grease and line the bottom of a 15 x 10 x 1-inch jelly roll pan with greased brown paper or aluminum foil.
3)Sift flour, baking powder, salt and cocoa together.
4)Beat eggs in a small bowl until thick and lemon-colored (about 5 minutes, high speed on mixer).
5)Pour beaten eggs into a large bowl.
6)Gradually beat in sugar.
7)Blend in water and vanilla.
8)Mix in dry ingredients slowly just until the batter is smooth.
9)Pour into prepared pan.
10)Bake 12 to 15 minutes, until top springs back when lightly touched in centre.
11)Sprinkle top of cake with sifted instant chocolate drink.
12)Loosen edges and turn out on clean towel.
13)Peel off paper and trim off crisp edges if necessary.
14)Roll up in towel from narrow end while hot.
15)Cool on wire rack.
16)Unroll when cool and fill with Orange Filling.
17)Roll up again.
18)Pour Chocolate Glaze over top of roll.
19)Cut in 1-inch slices to serve.
