Orange Sauterne Jelly

Ingredients
  Dry sauterne 1 1⁄2 Cup (24 tbs)
  Orange juice 1⁄2 Cup (8 tbs)
  Lemon juice 2 Tablespoon
  Orange peel 1 Teaspoon, finely grated
  Powdered pectin 1⁄2 (1/2 Package)
  Honey 4 Cup (64 tbs)
Directions

Combine sauterne, juices, grated peel and pectin in a large sauce pot.
Bring to rolling boil.
Stir in honey.
Return to rolling boil.
Boil hard 3 minutes, stirring constantly.
Remove from heat.
Skim foam if necessary.
Pour hot into hot, sterilized jars, leaving 1/4 inch head space.
Adjust caps.
Process 5 minutes in boiling water bath.
