Orange Sauterne Jelly
|Dry sauterne||1 1⁄2 Cup (24 tbs)|
|Orange juice||1⁄2 Cup (8 tbs)|
|Lemon juice||2 Tablespoon|
|Orange peel||1 Teaspoon, finely grated|
|Powdered pectin||1⁄2 (1/2 Package)|
|Honey||4 Cup (64 tbs)|
Combine sauterne, juices, grated peel and pectin in a large sauce pot.
Bring to rolling boil.
Stir in honey.
Return to rolling boil.
Boil hard 3 minutes, stirring constantly.
Remove from heat.
Skim foam if necessary.
Pour hot into hot, sterilized jars, leaving 1/4 inch head space.
Process 5 minutes in boiling water bath.
