Amber Jelly

Ingredients
  Water 1 Pint
  Lemon juice 1⁄4 Pint
  Sugar 6 Ounce
  Gelatin 1 Ounce
  Egg yolks 3
  Lemon rind 1 Teaspoon
Directions

Put all ingredients into a pan and allow to soak 5 min. Whisk over gentle heat until near boiling-point.
Do not boil or the eggs will curdle.
Strain through muslin and pour into a prepared mould.
This is a delicious and nutritious sweet for an invalid.
