Simmer washed blackberries with water and lemon juice until tender.
This will take about 30 minutes.
Squash them well with a fork, pour into a jelly bag and strain overnight.
Now return to pan allowing 1 lb of sugar to each pint of liquid.
Let sugar dissolve slowly, then boil rapidly, skimming frequently, until the jelly sets on a plate.
This should happen in about 10 minutes, but may take a little longer depending on the ripeness of the berries.
Pour into warmed jars and look forward to eating it.
These quantities should yield about 3-4 lb of ruby red jelly.
