Spiced Sauterne Jelly

  Boiling water 3⁄4 Cup (12 tbs)
  Lemon peel strips 1
  Orange peel strips 1
  Cinnamon sticks 2 Inch (2 Pieces Of 1 Inch Each)
  Whole cloves 5
  Sauterne 1 1⁄2 Cup (24 tbs)
  Lemon juice 1 Tablespoon
  Sugar 3 Cup (48 tbs)
  Liquid fruit pectin 3 Ounce (0.5 Bottle)

Pour boiling water over citrus peel, stick cinnamon, and cloves in a small saucepan.
Cover and place over very low heat 5 minutes; set aside 5 minutes.
Strain (discard spices) and add water, if needed, to make 3/4 cup "citrus brew." Combine "citrus brew" in a large saucepan with the wine and lemon juice.
Place over low heat and bring to simmering.
Add the sugar and stir until dissolved.
Increase heat and quickly bring to a full rolling boil; stir in pectin and return to boiling.
Boil rapidly 1 minute, stirring constantly.
Remove from heat and skim off any foam.
Ladle into hot sterilized jelly glasses and seal with melted paraffin
