Doryaki, also known by the name "Red bean pancake" is a traditional Japanese confectionary. It consists of castella, the famous Japanese sponge-like pancake sandwich made of two red bean pancakes fashioned like patties with Anko or sweet Azuki i.e. red bean paste layered in between.


The original dorayaki was made of a single layer and the current shape came into existence later in the early 19th century in Tokyo. The legendary history behind it is that the first Dorayaki was created when a Samurai, by the name Benkei left his gong (dora) behind when escaping from a farmers home where he was in hiding. The farmer used the same gong to fry special pancakes thereby naming them Dorayaki.

Ingredients and Preparation

Chief ingredients needed are lightly beaten egg, all purpose-flour, water, canned or freshly prepared red bean paste which is sweetened to desired level, sesame seeds and cooking oil for deep frying.

In a large bowl, the egg, flour, water and a pinch of salt are blended to form batter. In a greased frying pan, half the batter is poured and spread evenly to form a thin layer. It is cooked till done, but without turning over. The process is repeated for a second time. Azuki or red bean paste is placed in the centre and spread over the surface. The second pancake is then placed on top before garnishing with a generous amount of sesame seeds. The final step consists of frying the sandwich so formed till golden brown in colour and draining on paper towels to remove excess oil. It may be served whole as such or cut into strips to expose the inner filling.

• Total carbohydrate content of 53.5 g, with Dietary fibre content of 5.4 g and the sugar 25.0 g; remaining being other carbohydrate components.

• Total protein content is 7.5 g.

1. Red bean paste is rich in protein as well as soluble fibre that generates the feeling of satiety and promotes weight loss. Soluble fibre is also known to reduce LDL or bad cholesterol and triglyceride levels. It slows the entry of glucose into the blood stream.
