Filipino Shrimp Fritters

Ukoy is a nice snack food. People who like fried foods will enjoy it thoroughly.
  Cold water 3⁄4 Cup (12 tbs)
  Small shrimp 1⁄2 Kilogram (Tangunton)
  Oil 1 Cup (16 tbs)
  Cornstarch 1⁄2 Cup (8 tbs)
  Leek 1 , cut into strips
  Sweet potato 1 , cut into strips (Kamote)
  Palab mix 75 Gram (Mama Sita's)
  All purpose flour 1⁄2 Cup (8 tbs)
  Tofu 1 , diced (Tokwa)
  Nectar vinagre 1⁄2 Cup (8 tbs)
  Black pepper 1 Dash
  Garlic 2 Teaspoon, crushed
  Salt 1 Pinch

In a mixing bowl, combine water, all purpose flour, cornstarch, Mama Sita's Palabok mix, and stir.
Add tagunton, kamote, leeks, tokwa. Mix well.
In a saucer form patties of the batter.
Gently slide it into a pan with hot oil.
Fry until golden brown.
Drain excess oil.
To prepare sauce: combine vinegar, garlic, salt, blackpepper.
Serve ukoy with garlic dipping sauce.
