#137 Koyadofu

I think I walked past this in the supermarket for about a year before I found out it was a kind of tofu. Koyadofu is dried tofu. It’s really hard. And dry. Then after it’s cooked it’s like a sponge. I decided to follow the instructions on the back of this packet.
Ingredients
  Koyadofu 200 Gram, cubed
  Water 2 Cup (32 tbs)
  Soy sauce 1 Tablespoon
  Mirin 1 Tablespoon
  Konbu dashi 1 Teaspoon
  Salt 1 Teaspoon
Directions

MAKING
1. In a pan, pour water, add soy sauce, mirin, konbu dashi, and salt, allow to boil. Add koyadofu and cook for 10 minutes.

SERVING
2. Transfer to a bowl and serve.
