Japanese Omelette

Ingredients
  White fish 4 Ounce, finely minced
  Plain flour 2 1⁄2 Tablespoon
  Salt 1⁄2 Teaspoon
  Eggs 6 , beaten
  Sugar 3 Tablespoon
  Oil 2 Cup (32 tbs) (For Frying)
Directions

Mix together fish, flour, and salt.
Add beaten eggs; mix well.
When thoroughly blended, add sugar.
Heat oil in pan; when hot, pour in egg mixture.
Cover; simmer for 15 minutes or until bottom is browned.
Turn; cook other side.
If desired, sprinkle with finely chopped scallion.
