Extra Light Tempura Batter

Ingredients
  Egg 1 , separated
  Flour 1⁄2 Cup (8 tbs), sifted
  Cornstarch 2 Tablespoon
  Salt 1⁄4 Teaspoon
  Pepper 1⁄2 Teaspoon
  Cold water 1⁄2 Cup (8 tbs)
Directions

In small bowl beat egg white until stiff peaks form.
In another bowl sift together flour, cornstarch, salt, and pepper.
In a separate bowl beat egg yolk and water until frothy.
Gradually add flour mixture to egg yolk and water, mixing constantly.
Blend until smooth.
Fold egg white into yolk mixture.
Blend thoroughly.
Makes approximately enough batter for frying foods for 2.
