Soba Noodles In A Basket
|Noodles||10 Ounce, dried|
|Soy sauce||1 Tablespoon|
|Mirin||1 Cup (16 tbs)|
|Soy sauce||1 Cup (16 tbs)|
|Bonito||1 Cup (16 tbs)|
|Nori sheet||1 , toasted|
1. Cook noodles according to package directions. After cooling and rinsing noodles, set aside and allow to drain well.
2. Prepare SOY DIPPING SAUCE. Force-cool by swirling bowl with dipping sauce in a larger bowl containing water and ice cubes.
3. Prepare CONDIMENTS. If nori seaweed has not been pretoasted, toast by lightly passing shiny side over an open flame several times. Cut into fine shreds with scissors or wrap in a dry cloth and crumble into small pieces.
4. Place well-drained noodles on a plate. Sprinkle with nori seaweed. Serve with a bowl of dipping sauce. Mix wasabi horseradish and green onions into sauce. Season with seven-spice mixture or red pepper, if desired.
