Shrimp Tempura

Ingredients
  Large shrimp 2 Pound
  Flour 1 Cup (16 tbs)
  Salt 3⁄4 Teaspoon
  Eggs 2
  Milk 1 Cup (16 tbs)
Directions

MAKING
1. Peel the shrimp, leaving the tail intact, wipe it with a damp cloth and slit halfway down to make a cavity; press the sides out like a butterfly
2. In a mixing bowl, sift flour and salt, add beaten eggs and a cup of hot milk to make a thin batter
3. Dip the shrimp into the batter and deep fry for three minutes

SERVING
4. Serve hot alongside chutney
